朝晩ちょっと冷えますが
昼間ぽかぽかで湿度低め。
このくらいが過ごしやすいです🤗
:
4月から新朝ドラスタートして
毎朝BSで7:15〜観てますが
再放送が大好きな"あまちゃん"
洗い物の手が早くなってます(笑)
朝から元気もらえる〜
また袖が浜ならぬ小袖海岸行きたーい🌊
(GWに行ったから海女さんおらずでした)
:
今週の朝ごはん(am.6:30)
★ 縞ホッケの干物
★ 春菊のさつま揚げ和え
★ 茄子の揚げ浸し
★ 高野豆腐の含め煮
★ 切り大根と豚肉の炒め煮
(アスパラの根元いり)
★ 納豆ごはん
★ 大根の皮と小松菜の味噌汁
★ デコポン
★ お茶
:
大根の炒め煮は、大根を拍子木切り
少な目の塩でもみ水気を絞り
大根とお肉に片栗粉をまぶして
油で焼き、油をふいて
甘辛く味付けしました。
大根の食感が楽しくて
表面とろりと味が絡みます😋

Fridge foraged salad today with a little rummage in the store cupboard too- leftover organic lettuce leaves from yesterday’s Riverford delivery with roasted red peppers, Ortiz tuna, sliced avocado and tinned artichoke hearts. Drizzled with olive oil and some of yesterday’s homemade pesto. The snow has now vanished and had been replaced with freezing torrential rain! If you’re lucky enough to be somewhere sunny, please please send some sunshine, even just a little will go a long way ✨😊

Air Fryer Caprese Hasselback Chicken 🐔 

You all know that I love a hasselback chicken recipe! They're perfect for midweek meals! Low prep time and minimal fuss!

This one is caprese inspired and stuffed with vine tomato, mozzarella cheese and green pesto! 
The flavours are insane!! 👌

Nutrition ⬇️
Per serving of chicken

Calories- 383
Fat - 19.4g 
S/Fat - 6.8g 
Protein- 47.9g 

Slimming World - Use Mozzarella as your HexA option. The pesto is 5 syns! ❤️

Ingredients ⬇️ 
Serves 4 people 

• 4x Chicken Breast Fillet
• 2 x Aldi Nature's Pick Large Vine Ripened Tomatoes, finely sliced 
• 10 x Tsp Aldi Cucina Basil Pesto 
• 160g Aldi Emporium Italian Mozzarella, finely sliced 
•Salt, to taste 
•Black Pepper, to taste 
•Parsley, Dried 

Method ⬇️

Preheat the airfryer to 180 degrees.

Season the chicken breast with salt and pepper. Cut 5 incisions across with width of the chicken at equal distance apart. Be careful not to cut all the way through. 

Slice the tomatoes and the Mozzarella. To each incision add 1/2 Tsp of green pesto, 1 piece of tomato and 1 slice of Mozzarella  Repeat until all the incisions are all stuffed. 

Season the chicken with dried parsley. I simply sprinkle this over the top of the chicken breast.

Place in the preheated Air fryer. Cook for 20 minutes at 180 degrees. 

I've served mine with air fried potato slices and tenderstem broccoli 🥦 

Edit -  For the potato rounds:
 You'll need one medium potato per person you're cooking for. 
Peel the potatoes and slice into round slices a couple of mm thick. 
Spray with low calorie cooking spray and season with salt, garlic salt and paprika. 
I cooked mine in the airfryer for around 20 mins at 180 degrees. 
TIP! Keep an eye on them for the last 5 minutes as they can take a shorter/longer amount of time depending on how thick they are cut.
